Anytime you want a quick and nutrient dense meal, a stuffed, baked sweet potato can hit the spot. The addition of mashed avocado and or some cottage cheese will give you all the proteins, fats and carbs you need with minimal chewing required.
If you happen to be vegan or are avoiding dairy you could replace the cottage cheese with hummus instead.
Bake the sweet potato for 30-40 minutes in an 180 degree oven.
Top with half a mashed avocado and a large tablespoon of cottage cheese (or hummus)
